A super easy delicious and healthy breakfast burrito to keep you going throughout the day.

 2 large eggs
 1 regular sized tortilla wrap
 3 tbsp cheddar cheese (I like mild but any cheddar will do)
 1 pinch mixed herbs or oregano
 1 tsp vegetable oil
 salt to taste

This recipe requires very simple ingredients for a quick and healthy breakfast.

Crack eggs into a bowl and whisk until mixed. Add salt and a pinch of mixed herbs to taste here. As I am trying to reduce my salt intake, I usually leave salt out.

Add oil to pan and then pour in the egg mixture.

Let the egg mixture cook until it's 1/2 way cooked then sprinkle the cheddar cheese on top. Let it cook for another 30 seconds

Add the tortilla wrap to the mixture. At this stage the egg mixture is still slightly sticky but this is important as this will "glue" the tortilla wrap to the egg mixture.

Leave the tortilla wrap for about 30 seconds to settle then flip the tortilla wrap so the tortilla wrap is faced down. Now leave for 1 minute to crisped the wrap.

Now plate up the wrap, roll it up and then cut in half and serve.

If you want to make this in advance, you can freeze the tortilla wrap in cling film. Take out of the freezer overnight to thaw and zap in the microwave to warm up.
