I actually forgot about this dish until recently when I was at a loss for what to do with some stewing steak that I got from a Riverford meat box. It then dawned on me that the expiry date was coming up and if I didn’t do something with it, it would go to a total waste. It was a Saturday morning and we needed to go out for Willow’s Chinese school and then take her to the fun fair in the afternoon to meet friends. I then had a “Aha moment” and this recipe popped into my head – I was reminded of my grandmother and mum’s recipe to make this Asian style beef broth to accompany dinner or make it into a complete meal by itself by adding noodles to the broth. Within the next 10 minutes I was prepping the broth, loading up the slow cooker and then raced to get dressed and out the door for Willow’s Chinese class. It was bliss when we tumbled through the front door and all I needed to do was cook some rice noodles to add to the bone broth with some black pepper and coriander to garnish. Meal prep goals accomplished!

The best thing about making a big batch of this soup is that this can be frozen for later and small portions reheated work well for a single portion noodle lunch when alone on a weekday or weekend.

 500 g stewing steak
 1 large mooli
 2 inch thick ginger peeled and sliced into pieces
 1 portion flat rice noodles per person
 salt to taste
 cracked pepper to serve
 coriander to serve

First bring to boil water in a pan and add the stewing steak. Let the meat simmer until you get all the gunk out of the meat and the meat is cooked through. Rinse the meat through and add add more boiling water to the stock pot and re-add the meat. This is an important step so you get a beautiful clear bone broth.

Peel and slice the mooli into large chunks and add to the pot. Peel the ginger and slice into pieces and also add to the pot.

Once the broth comes to a boil, transfer to a slow cooker and cook for 6-8 hours. I generally keep the slow cooker on high for 2 hours and then the rest of the time on low heat but you can leave it on a low heat the whole time.

When you are ready to eat, boil the rice noodles to the quantity you want in a separate pot, pour out the water and then add the bone broth to the If you are not serving to young children add cracked pepper and salt to taste and garnish with coriander.
