There are times when you need a chocolate cake fix and you can’t be bothered to actually make a proper cake. Or one of your kids (or partner) is moaning for dessert but there is nothing prepared. Here is where the microwave chocolate mug cake can come to the rescue – within 5 minutes you can create a really amazing dessert for the family and everyone will think you are a rock star parent.

The first secret to this recipe is to use sour cream if you can. You can substitute the sour cream with milk if you don’t have sour cream to hand but it is the richness and sourness of the sour cream that pairs well with the cocoa powder to create a really luxurious taste and texture to the mug cake. The second secret is to cook the mug cake in increments so that you don’t over cook the cake (and it doesn’t rise up like crazy). And finally, the third secret is to use the biggest mug you can have – or it could seriously overflow and you will have a messy molten microwave batter cake…….

I tend to like to turn the cake out of the mug after it slightly cools down and serve with sour cream and fruits. I find one mug cake can serve an adult and one toddler easily and if you are not much of a dessert person you can share it with two adults and a toddler. Oh – if you also want to be extra organised, you can store the dry ingredients in a mason jar so you can make the cake even quicker when you are desperate for a quick dessert (as all you need to do is pour the dry ingredients from the jar into a mug and then add the other wet ingredients in).

Microwave chocolate mug cake that is super easy to make and very fun to make with toddlers and kids.

Yields1 Serving

 4 tbsp plain flour
 ¼ tsp baking powder
 3 tbsp sugar (caster sugar is best)
 2 tbsp cocoa powder
 1 egg
 3 tbsp sour cream
 3 tbsp sunflower oil or neutral vegetable oil (olive oil is too strong but okay if you don't have anything else)
 Dash of vanilla paste (you can use essence or extract/essence instead)
 2 tbsp white chocolate chips (you can also add chopped nuts or dried fruit)

Add the plain flour, baking powder sugar, and cocoa powder into your largest mug. What I find helpful is to store this mix in a small jar so you have prepped this step for an even speedier microwave cake.

Add the egg and mix.

Add the sour cream, oil, and vanilla paste and mix into a paste. Now add any extras you may have.

Put the mug in the microwave and cook on high for 1 minute. Now stop, take a quick look at the cake and now cook in 30 second increments up to a maximum of two minutes. It's really important you don't overcook the cake or it becomes rubbery - that's why I recommend cooking in 30 second increments and even stopping before then to check. As all microwaves are different, this requires a little bit of judgement to get right.

Tip the cake out on a plate and serve plain or with sour cream/ice cream and fruits.
