There are times when it’s just too busy and you need something really easy on a weekday (usually a Thursday for me) when you are losing motivation and you need something on the table asap as your family needs a meal before the nighttime routine starts.

I’ve found this recipe is a lifeline when you need something quick and easy and the extras you can freeze for later or for other uses (e.g. a sauce on salmon, a sandwich filler, condiment for minestrone soup). Even better if you can be organised, you can even get some of the pasta boiling as you whizz up the ingredients for this pesto.

Quick and easy pesto that can be made in 15 minutes for a busy weeknight.

 100 g pine nuts
 150 g basil
 100 g parmesan
 250 ml olive oil
 2 garlic cloves

Toss pine nuts on a medium-low heat until golden brown.

Blitz the pine nuts with the rest of the ingredients in a food processor until well combined.
